LE CIMATE EXTRA VIRGIN OLIVE OIL
ORGANOLEPTIC CHARACTERISTICS
Our extra virgin olive oil, produced for a quantity of about 10,000 bottles / year, is processed by mills of absolute trust. The olives are green in color with greenish shades tending to black, small in size, compact and acidulous to the taste.
The extra virgin olive oil, cold pressed, is obtained from the typical olive varieties of our territory: Moraiolo, San Felice, Leccino, Frantoio, Itrana and Nostrale di Rigali
The harvest is carried out by the plant manually, with shakers, to ensure the freshness of the product and the olives are cold-ground (no more than 20 ° C) within 10 hours after harvesting. The product stands out for its absolutely negligible aroma, color and degree of acidity, with scents of tomato and / or cut grass.
The qualities of the olives are selected and mixed in appropriate doses.
